Last night's dinner was the result of a pantry raid. You see the temperature dropped so drastically over the last 24 hours that the salad I had originally planned was kicked to the curb to be replaced by something warm and comforting - "warm" being the priority with a few other requirements. It had to be soup or chili and it had to have some spice to it. I'm still struggling with allergies and sick of taking pills that make me feel only half alive and only work a quarter of the time so I figured I'd be better served by some good old fashioned Mexican sinus medicine.
I had some Caliente Chicken Sausage from Sprouts in the freezer and figured I'd make use of their spicy ingredients. For those of you that aren't local, hot Italian chicken sausage could certainly replace the Caliente; however as far as I can gather from looking at it, this particular sausage is loaded with red, green and yellow peppers, cilantro, red onions and jalapeno along with some spices to really provide a huge boost to any dish. I threw in onions, more red pepper, jalapeno, canned green chiles and a ton of spices along with some turkey broth I had in the freezer and a can of diced tomatoes. The only can of beans I had weren't beans at all but black eyed peas and you know what, they sure do look more like beans than peas, but they worked just fine. Download Chicken Chili Caliente
Along with some left over corn bread I had hiding in the freezer, dinner was on the table in no time flat and was just what the doctor ordered. See what a little imagination and a sinus headache can produce?
I would say that would work quite nicely on the sinuses....looks amazing too!!

That looks so darn good. I really love the chili in a cup idea and the colors just pop out!

Julie; Isn't that the truth - a bowl of hot chili and a nice cozy blanket.
Deana; I so rarely make chili out of anything but beef or pork, it was quite a success. As for the picture - those darn shadows, but I refuse to cook dinner at 2 in the afternoon just to get a decent picture. One of these days we'll build a light box and solve the problem.

I made this recipe last night for dinner. It is very spicy even made my "big guy" sweat but he had seconds and I had leftovers for lunch. It didn't seem as warm today but the taste is awesome.

Betty - so glad you tried this and you're right, the heat mellows out when it's refrigerated for a day.
