Leftovers are lovely sometimes aren't they? I have to admit I didn't much like them when we were kids - mostly because they were often indistinguishable ie - hash. But now that I'm uhh older, I've learned there are some leftovers that are much better than others.
Point in fact - last night's dinner was an Asian Chicken Salad made from Monday's leftover chicken. The big guy has a late class on Wednesday nights and is seldom home much before 7:00 which means dinner either has to be something that will hold well, or can be prepped in advance and finished when he calls to say he's on his way. Last night was supposed to be a soup night but soup isn't so attractive when it's 88 degrees outside and the kitchen's even hotter because I'm too cheap to turn the air on before the middle of May.
This particular salad has only 4 ounces of soba noodles in it, but there's a ton of veggies including blanched asparagus, carrots, zucchini, green bell pepper, red onions as well as the chicken of course. The dressing is a mix of oil, cider vinegar, soy sauce, sesame oil, hot chili sauce (sambal olek) and honey along with lots of garlic and minced fresh ginger. I topped the salad with pineapple chunks, toasted sesame seeds and some potstickers that I just happened to have in the freezer but honestly they were kinda' overkill. The salad stood just fine on its own - thank you very much.
One thing about this salad is that any vegetables you have hiding in your fridge or freezer work really well in it like sugar snap peas, green onions, green beans - even bean sprouts. If you don't happen to have any soba noodles, don't sweat it - spaghetti or vermicelli works great too. Just check out your pantry and fridge and get cookin'. Download Asian Chicken Salad
I love having leftovers to work with too, especially meat. Half the work is done when that part is already cooked. For the most part I'm pretty good at choosing what I can throw together but every once in a while, I put together a real dud. (It always sounds good in my head...LOL)

That looks so good - I would love to eat that - not sure I could get that by William - I just might try.... like - maybe tomorrow hehehehehe I am doing chicken tonight and should have leftovers for tomorrow.... and I have soba noodles I bought the other day and pineapple cut up in the fridge..... hhhmmmmmm ideas...... and Camille Ana LOVES pot stickers - gonna have to grab some more of those....

True - he is Colombian - anything you put on a plate and put in front of him - he will eat - just about....
