Left over mashed potato pie. Oh me, oh my. Now that is some wonderful stuff and we had another couple of pieces of it last night along with a steak the big guy cooked outside. I know I already bragged about that darn pie, but you know what - it just gets better and better. You all just HAVE to try it! Enough said.
Thinking about something different to share with you sometimes causes me to hit the panic button, but I had some asparagus hiding in the fridge from last week so figured I'd have to make a salad to go with dinner. The result - this very tasty white bean and asparagus salad.
Adapted from a Southern Living recipe, this colorful and tasty salad is a great way to top up your fiber quotient for the day without a lot of calories. Blanched asparagus is joined by canned white beans, roasted red peppers, sun dried tomatoes, capers and red onion, all dressed in a mustard sage vinaigrette. It's quick to make and it would be fabulous along with some grilled chicken fresh off the barby though it was no slouch next to our pan grilled steak either. Download White Bean and Asparagus Salad
The big guy went through his honey do list yesterday like a house a fire. I'm tellin' ya, he trimmed trees, got beat up by the bougainvillea, fertilized, weeded and raked the lawn, if you can call our pebble covered front and back yard lawn that is. The pomegranate has sprung it's leaves, the lemon and limes are in blossom and our flowering plums are just ready to explode into full color. It's springtime in the desert - so we hold our breath and enjoy it. Summer will be here tomorrow.
Oh my - what a lovely salad - and I could do that!!! And yes - I want me some potato pie!!!!
You have bougainvillea, too!!! My favorite!!!! - What color - mine is that fuscia color!!!

Lea - I see that it is spring there already. Your pics are beautiful! We have 3 red bougainvilleas along our side wall and one dark pink one at the front door. The red ones are quite bald right now, after their haircuts, but they grow like stink and will be beautiful in no time. I want me some Arepas and you to teach me how to make them. They look amazing! Wouldn't they be great stuffed with the rest of those shrimp in a sandwich? Oh my! Sure wish I could figure out why I can't leave comments on your site!

The 'white bean' caught my eye. I thought I had never seen a white bean! Funny how the mind works - I envisioned a 'white' green bean. This looks delicious.

That just is a bummer that you can't leave comments - odd thing the internet... That would make a good sandwich I think. And you could figure out how to make the arepa all by yourself - too easy actually!!!! If you can make a burger - you can make an arepa!!!! - I make funny looking burgers, too hehehehe. I actually like my Arepas with a hint of sweetness to them - strange I know... but I am an odd duck...

Sarah - LOL - fooled ya. Wonder if there is such a thing as a "white" green bean - maybe I could get the big guy to eat it, but then again, maybe not. He did like this salad though.

The salad looks delicious. I loaded up on asparagus again yesterday since it's still so cheap.
You guys and your talk of bougainvillea... I consider myself brilliant that I even know what that is. Years ago I was into Dean Koontz novels and he couldn't write one without talking about bougainvillea, so I finally dragged out the dictionary to look it up. And I must say that the pictures I saw of them were lovely.... I'm envious!

I agree Mags that the bougainvillea are beautiful, but like most things in the desert they have HUGE thorns and can rip you apart. It's always a contest to see if the big guy can get them trimmed back without suffering debilitating injury. I gotta say, he left no hostages. EVERYTHING'S BALD!!!
