Remember the pork carnitas we had last week? Well, last night's dinner was made from what was left, after we each had another feed of carnitas for lunches, barbecue pulled pork sandwiches for lunch over the weekend and finally enough tamale pie to feed at least 6 people, comfortably...all this on a 4 pound pork shoulder roast at $1.29 a pound. That's 13, yes that's right 13 meals (servings) which equates to 39 cents a piece for the meat. Go figure.
If you're looking to feed your family on a budget, or heck - ya just want to save some coin for a month long vacation in Oregon which is less than 16 weeks away, then buying a cheap pork roast and cooking it low and slow is definitely the way to go. Other than making a darn tasty chunk of leftovers, it can be made into a variety of different meals. I don't know about you but personally I could never get tired of the stuff. After all who ever gets sick of chicken...and pork is the OTHER white meat. Right?
This Tamale Pie is definitely going to make a re-run before we hit the beach...I'll tell you that much. Using my favorite 9 inch cast iron skillet, I sauteed some onion, green and red pepper along with a jalapeno and a can of green chilies before adding about 4 cups of pulled pork to the mix. ..I say about, because sorry but I didn't measure it. With the addition of chicken stock, a little salsa verde, and a healthy dose of BTU'S, my tamale pie base was ready for it's cornbread topping in no time flat. Download Pork Tamale Pie
Along side the leftover Corn/Black Bean Salsa also from the other night, the big guy was laughing all the way to the bank and so was I. I kid you not.
