Pork ribs. Ahhh, what could be better than wonderful calorie laden slow cooked pork side ribs. Juicy, kinda' sweet, kinda' spicy - they're a perfect Sunday night dinner. With most of the country still suffering from "winteritis", I thought we'd cook these ribs in the oven last night instead of on the grill so you all wouldn't be too upset about our sunny, warm 70'ish weather. That and the fact that the big guy had a full day of honey do jobs and certainly didn't need one more thing to add to his list.
This recipe from epicurious.com is a Gourmet Magazine special that was rated quite well by the people who had tried it, at least according to their comment section. Rubbed with a mixture of cumin, allspice, paprika and chipotle chile powder, the ribs are covered in foil then baked in a moderate oven before being dressed in an Asian spiced barbecue sauce. Tender, moist and flavorful they're a fair alternative to the charcoal barbecued low and slow variety that come out of the big guy's outdoor kitchen.
Hey - I said fair because I'm very spoiled when it comes to tasting perfectly cooked ribs. The big guy's are the BEST and there's no way on this green earth I'll ever surpass them. I mean it's GOT to make him feel pretty darn special because his ribs'll win the top prize in our family every time.
Those ribs do look tasty and delicious - and do tell - what did you serve with them - that yellow stuff in the background there???? I love yellow stuff!!! I know - it has been warm enough here to go out bare foot for the past week or two - even at night to bright the pups out to potty - love it!!! Pretty colors in the photo - like the yellow in the foreground and background!!!!!!

Lea - we had the ribs with Green Chile Spoon Bread. I was less than impressed with it and that's why I didn't mention it...but seeing as you're so nosy...LOLOL I'll make it again and post it next time. It just needs some work!

Your ribs look great! It's always nice to have a way to do for yourself what you'd rather not have to add to someone else's list.

Cathy - I agree and think that the messier they are to eat, the better they taste.
Lisa - thank you and you're right. Cooking them in the oven also means you get to enjoy the aroma coming from the kitchen.
