Dinner last night was our second of two this week from Eating Well and perfect for a quick dinner. The big guy was a late getting home and had papers to mark when he did, so dinner need to be fast and kinda' last minute. This farfalle pasta with chicken, red peppers and artichokes certainly fit the "fast" category, but I have to admit being a little disappointed with it.
I made a couple of substitutions in the recipe which means I honestly shouldn't be giving it a bad review since I didn't follow the recipe exactly. As a matter of fact, I used toasted almonds instead of pine nuts, chopped onion for shallots and added some grated parmesan; however, I think if I make it again I'll also exchange lemon juice and rind for the balsamic/chicken stock combination. I mean the dish wasn't BAD, it was just kinda' ordinary. I guess the honest truth is - if I want runny chicken pasta I'll make chicken soup! The big plus is that the calorie count was pretty darn good at 375 a serving - see what happens when you leave the "cream" outa' things?
The big guy enjoyed it and reaped the benefits this morning when he stepped onto the scale. Course if I killed myself on the stair climber for 45 minutes every day like he does and burned between 800 and 900 calories in the process, I'd be reaping the benefits too. Ewww!
It certainly looks delicious! But I know what you mean about leaving out the cream... things just lack that richness we're all so fond of.
