Monday's can sure be busy can't they? My little Mommy used to call them "blue Monday's", because the weekend's over and a new week's beginning. Actually more than likely it was because Monday was traditionally "wash day" and doing laundry on the farm was not a pretty job back in the day.
Well for us, the only blue thing yesterday was the sky - that is when I took the time to notice later in the day. It was grocery day along with getting caught up after a weekend away, so dinner last night was simple and quick. That meant pasta of course.
When I say quick, I mean quick. By the time the pot of water boiled and the linguine cooked, the garlicky vodka infused sauce filled with shrimp, scallops, tomatoes and a touch of cream was ready and waiting. Download Pasta with Shrimp and Scallops We actually topped our bowls off with more spicy red pepper flakes, and a smidgen of grated asiago cheese. Along with a fresh tossed salad, it was a meal fit for a king! By the bye - the king loved it. How could he not? It was delicious!
Now for you purists that frown about the fact that we had cheese with our seafood...get a grip. I'm going to quote from the forward in John Conley's cookbook Salsa Brava Cocina (the cookbook we picked up on the weekend). He says "...To cook is to express oneself, to feel, explore, and experience that which comes from within, that which came before, and that which lies ahead --to create something that has an existing basis, but to do it not by following rules but rather by following feelings. A recipe is only a thought, a road map with many detours..."
So, how does that grab ya? Yup, I thought so! I couldn't agree more.
Who says you can't have cheese and seafood??? Probably those same fools who think that you can't have red wine with it either... hmmmm I don't believe it. What I do believe is that you had a most wonderful meal - yet again!
