Dinner last night was quick and easy. After all Friday nights around here usually require something quick and casual as far as dinner is concerned because we're old and usually exhausted at the end of the week. I had picked up some shrimp on sale at Sprouts during last week's market run and since I've a whole bottle of smoked paprika to use up, decided to try this recipe adapted from Bon Appetit. In my opinion roasted shrimp are far superior in flavor to the boiled variety, particularly shrimp roasted with the shells on. Unfortunately I didn't have that option because the shrimp I'd purchased on sale had already been peeled and cleaned down to the tails but they certainly didn't suffer overly. Just make sure to use a cast iron pan and heat it well before adding the well dried shrimp, otherwise they'll steam instead of roast. Spiced up with garlic, roasted red peppers, olive oil, smoked paprika and cayenne pepper and finished with oregano and sherry, these tender little morsels are ready in less than 10 minutes. We had our shrimp with warmed Mediterranean flat bread courtesy of TJ's and a fresh tossed salad. How's that for a quick dinner? Best of all, there's lots left for lunch today. Bonus!
If I make these again, I'll up the garlic quotient and add some of those preserved Meyer lemons I've forgotten are hiding on the bottom shelf in the refrigerator; however, the shrimp were good and tasty with plenty of heat - enough that a little tzatziki or other such cooling agent on the side would be lovely, just to give your palate a break.
wooo hoooo - something else to do with that shrimp at the bottom of the freezer that is tasty and delicious - June - you are an angel!!!!

I'd like to make a reservation for hubby to spend a week at your home so he could get his fill of all the wonderful seafood you and the big guy are always making. He's a suffering soul, ya know.... he never gets shellfish from me.
Of course, I'd come along just to watch you and your cooking techniques. And I promise I won't talk too much!
