Sourcing new recipes and dinner ideas has almost become my full time occupation, or at the very least a strong obsession. I spend hours browsing through cookbooks, old magazines and new ones too looking for inspiration, never mind the time spent on the internet. As you no doubt can tell, I absolutely love trying new recipes and putting my own twist on them, which often means extra spices and such. Oh well. The garlic growers in Gilroy and pepper producers in Hatch are unlikely to go bust as long as I'm cooking.
Last night's dinner was from Eating Well and it was a huge hit in our house. Cube steaks cook so darn fast which means they're a great week night dinner choice. Although there are more tender cuts of meat that would really shine with this Mushroom Sherry Sauce, these tough little 4 ounce steaks were a perfect size for the portion control challenged. For this meal, it's all about the sauce (oh and the garlic smashed red potatoes if you want to know the truth).
After the steaks are cooked for a grand total of 4 minutes, they're removed for a rest and mushrooms and shallots are added to the pan to saute until the mushrooms are soft and give up their juices. Flour joins the pan to thicken the sauce, then equal parts of sherry and beef broth. Spiced up with a touch of thyme, coarse ground pepper and salt and finished with sour cream - it's a real winner! I'd love to make it again for pork, chicken or some lovely little beef tenderloin steaks. Actually this sauce would even make an old shoe taste divine - not that I'll be adding that to our weekly menu, mind you. Download Cube Steak with Mushroom Sherry Sauce
Served with a choice of vegetables and a small side salad, dinner was super quick and totally accomplished on top of the stove, which is important now that our temperatures are starting to rise. The weatherman's calling for 90 today with high winds too. There go the blossoms and spring with 'em.
I agree that sauce would be great on almost anything. That meal right there is what hubby would call a comfort meal. (me too!)

Kathleen - You're right and you know that gravy would make liver taste first class...the big guy's already put in an order...but man, that Chicken Marsala of yours looks amazing too!
