Hey I didn't cook last night. It's true. I just had some of the Pasta Salad with Smoked Salmon & Asparagus from the night before. One thing about pasta salad - it just gets better with time doesn't it? Well I'm bombing around getting things done this morning before the big guy and his huntin' sidekick get back. They're due around 11:00 so I'm going to put on a pot of soup and put a pie in the oven. Oh, I got plans for a special Valentine's dinner tonight too, but I'll share that with you tomorrow. Suffice it to say, it'll be another "kitchen" day which suits me to a "T".

A stromboli would make a fabulous after work dinner as it only takes a few minutes to put together and smells like heaven when it's cooking. In fact, it really is just a glorified pizza without the sauce. Chock a block full of cheese, pepperoni, ham, salami and roasted red peppers, as you can imagine it is full of that good pizza flavor. I served it with a bit of marinara as dipping sauce and along with a "deconstructed salad", it was a perfect lunch for my hungry men.
A word of warning - it's not exactly "light" in the calorie department, so plan accordingly when you're fitting it in to your menus for the week. Enjoy!
Lovely lunch and lovely table!!! - Did you get to eat outside????? Hey - isn't it so rich that you can only eat a little bit - so it is ok if it is a lot of calories - you really don't get that many in you since you don't eat THAT much? I noticed that "pretty" salad right away - first word that popped into my head. Where did the dough come from? I just started getting over a life-long fear of yeast and baking is a new love...

Thanks Lea - yes, that's our outside table. It was a beautiful day. The dough was courtesy of Trader Joe's but if you look under Pastry-Savory in the index you'll find my pizza dough recipe which would work just great. I was just too lazy that day! Working with yeast is pretty darn easy. I used to make home made bread a lot and English muffins too - problem being, we ate too much of it. I have a hard time saying no to warm bread fresh from the oven and good butter. Yum.

I hear you about eating too much bread when you bake the stuff - I have the advantage of living around alot of hungry cousins who love bread who I also happen to love, too and I am willing to pass along fresh baked bread to!!!! Nothing makes a couple in their 80s happier than fresh baked bread several times a week! - Or anything els baked or cooked for that matter!

We just got back from a trip to Trader Joe's and I actually had a bag of pizza dough in my hand before putting it back and telling myself "oh, I'll just make it from scratch." Wish I would have bought it and this could be in the oven right now! We haven't eaten dinner yet and it's looking like it's going to be leftover soup.

Lea - I know what you mean. I'd give anything to be able to bring my little Momma a piece of the pie I made today along with a cuppa' tea. She'd be doing the jig.
Mags - Darn it all - that TJ's crust is pretty good, but honestly, 45 minutes and you can do better! Glad you made it to TJ's. It's worth the trip, ya?

Lea - I see on their map that you'd have to drive a looong way to get to one. I've often wished they'd start a mail order division.
