I've shared what we had last night for dinner with you all before - Cajun Meat Pie and Salad, so I thought I'd give you something new and show you the casserole we had for brunch on Sunday. This Torta Rustica would be a fabulous fit for any meal and along with a salad, I don't think you'd hear one word of complaint if you wanted to serve it for dinner too.
Bread slices are used to line a casserole dish, followed by wilted spinach, browned hot Italian sausage, cheese, and roasted red peppers. Topped with a custard made from beaten eggs and half and half, it puffs up into a souffle like jumble of goodness as it cooks, and the bread slices get all crispy on the edges. Yesterday was a day of desert rain, well needed but a tad inconvenient if you want to know the truth. Today looks like it'll be a beauty because so far there's not a cloud in the sky though it is some windy and very cool (37). We're doing the touristy stuff today and heading out to Tubac, a little artists' community south of here and just north of the Mexican border, and we'll likely make a stop on the way at San Xavier del Bac mission, a church that was constructed in 1783 and is also called "the White Dove of the Desert". It is an amazingly beautiful and very peaceful place to get in touch with yourself - goodness knows we can all use a little of that from time to time.

Hey Mags - this is just an example of a savory "bread pudding". It's kinda' wonderful if you wanna' know the truth although I asked the big guy if he'd like it for dinner some night and his response was "he@% no...it's breakfast food".
