The big guy was home from the wilds last night for dinner so I cooked up one of our favorite meals to celebrate. This is one of those put it in the oven and forget it until dinnertime dinners, and kind of leads the nose towards home. You know what I mean? It smells absolutely marvelous darlings when it's cooking.
Not unlike Chile Verde, this braised pork is teeming with Southwestern flavor including onions, green bell pepper, Anaheim peppers, cumin, and tons of garlic. The kicker is the sweet/sour flavor brought about by red wine vinegar, capers and sweet potatoes (I used ruby yams). Throw some black beans into the mix and your supper in a bowl demands to be accompanied by tortillas and a pint or two of good Mexican beer. This stew is unusual, hearty and not spicy hot at all - in fact we had ours with extra hot Salsa Verde on the side just to kick it up a notch. Download Santa Fe Pork Stew
The big guy's home for a couple of days to work then back to the wilds for another few days. Needless to say I'm happy about it and so's the kitchen. It was feeling rather neglected I'm thinkin'.
So glad your big guy's home with you for a couple of days. As much crap as we give our men, we're lost without them, aren't we?
Don't let the big guy read this or his head'll get all big and then you've got another issue to deal with...LOL
