In the interest of using some vegetables that were hiding in the drawer in the refrigerator, never mind the fact that I was craving something without meat, last night's kitchen effort involved a different recipe for Curried Vegetables.
This particular recipe's from Epicurious.com and calls for coriander and cumin seeds, as well as curry powder, hot hungarian paprika and salt along with red wine vinegar and olive oil. While their directions call for cauliflower and onion only, I figured why not throw in a little sweet potato and I'm so glad I did. The only problem is there was way, way too much salt! You see I use a wonderful coarse salt as my salt d'ordinare. It's called Pacific Salt, Sel de Mer and is a product of the South Pacific. It is solar dried with no additives and as different from Morton's table salt as night is from day. Although I use regular salt for baking, there's nothing better than a good coarse salt for cooking, and this one while less expensive than most, has absolutely fabulous flavor. The problem being it is much saltier than regular salt, and since we've cut back on the stuff anyway for health reasons the 1/2 teaspoon I put onto my roasted vegetables was way too much.
Now don't get me wrong, it was a pretty good recipe, but not as good as the last time we had roasted curried cauliflower and believe me, not near as good as the Manchurian version. So what's the moral of the story? When you find a winner, ya' gotta' stick with it!
What's happening in this neck of the woods? I've a friend coming to visit a week today that I knew in my other life (hockey days, pre big guy), and I haven't seen her for way too many years. We've got eons to catch up on and I've GOT to be organized. Good thing the big guy dropped a bomb when he called last night - he won't be home till Sunday night now. C'est la vie. It'll take me at least that long to get everything done. What's on your agenda this weekend?
Odd - I am such a protein person - I love veggies - but I need protein in there in some form - doesn't have to be meat... but this meal looks lovely nonetheless! I will take your advice and try the other recipe though. Rita has settle in nicely. Has won over the cat and the hubs. Last night the hubs said she could sleep on the bed if she wanted. I have her trained to sleep on "her" bed by my side of the bed... not gonna change that - she is just too big and goofy! If she sneaks up - oh well - but I don't think she will. She has even made friends with the neighbor's goat! Visits it daily.

Rita sounds like a sweetheart. I'm so glad she's settled in so nicely. Pets are a hoot aren't they - not a day goes by Max and Georgie don't make me laugh!

Cathy - You're not alone - neither did the big guy till I made it my mission to change his mind. This one he would HATE, but he loves the Manchurian cauliflower. He's also partial to Thai curries which are a whole different story. Go figure.
