Dinner last night had to be easy cause because the cook was otherwise occupied. Max picked the day to dance the watusi again so gone were the plans for a 4 course meal...slight exaggeration on the number of courses, but something better was simply out of the question.
I whipped up what I call Hot Brown Chicken Burgers - ground chicken mixed with spices and parmesan cheese, then cooked on the flat top and served with bacon, sliced tomato and a smooth creamy cheese sauce for dipping. Nothing fancy - just good simple plain grub. We're rather fond of Kentucky's Hot Brown Sandwich so I figured the flavors would be just as good in burger form (I was right - again!) Ha.
What's a "Hot Brown" you ask? It's the ultimate decadent sandwich made from sliced turkey and served open faced along with pimentos, and bacon, all smothered in a cheese sauce. In the interest of a depleted kitchen, I left out the pimentos though I guess I could have used roasted red peppers, and I used ground chicken instead of turkey because it was $2.00/lb cheaper (what's with that?). Today promises to be a better day so far as Max the wonderdawg is concerned. He's much better. We've a bunch of errands to run and he'll be ready to go as soon as he wakes up from another nap - his third this morning. The only thing is the big guy leaves tonight again to go back into the wilds until Saturday, so heaven knows what'll be cooking in JBug's Kitchen over the next couple of days. It's a mystery to all of us so you'll just have to stay tuned to find out.
Is this the same as the Kentucky hot brown?

Cathy - a Kentucky hot brown sandwich is open faced with turkey on top of bread, topped with cheese sauce, bacon, pimento, sliced tomato and more cheese which is then melted under the broiler. It's pretty darn tasty. This is just my version of it in "burger" form.

Wow this sounds darn tasty - never had a hankering for a hot brown before because I really don't do turkey - but I do like the chicken idea... on a nice slice of beer bread... hmmmmm might have to find some chicken in the freezer for tomorrow... I have bacon... I have beer to make the bread - can even sneak cheese in the bread. I have cheese. I have a cut up red pepper - my child wanted to "plant a garden" today and needed red pepper seeds hehehehe... they can have tomato - got those ripe in the window.... hmmmmm

Lea - sounds like you've got it all covered. Raining here today and COLD (46)..isn't it supposed to be hot in the desert? Your daughter sounds adorable - the joke will be on you if the seeds germinate. LOL Max is much better thanks. He seems to have trouble seeing out of his left eye today though. He ran smack into a wall and almost knocked himself out. Hopefully it's just temporary.

Thanks Mags. Sure love the look of your turkey meatloaf yesterday. It was beautiful! Yes, Max should be good for another 4-5 weeks now - unless he gets into something he shouldn't. LOL

Darn - no chicken in the freezer - lots of shrimp... gotta eat shrimp this week - I am cleaning out the freezer - spring cleaning! Gonna have to do the hot brown soon...

Lea - shrimp sounds darn fine to me. I'm spring cleaning too. What a drag that is!
