As you can tell, I haven't exactly been burning up the kitchen cookin' while the big guy's been away; however, I have been doing some baking. These muffins are the "F" stop in our alphabetical muffin tour and long overdue I might add.
Full of oat and wheat bran, ground flaxseed, whole oranges and chopped figs, they're incredibly moist, flavorful and perfect for breakfast, or snack time or anytime in between. Download Figgy O'Fiber Muffins They're especially wonderful this time of year when the oranges are coming off the trees - I made these with tangelo's, but honestly any old orange will do. As for the figs, if you're not a fan you can substitute raisins or even dates, but don't forget the sprinkle of cinnamon sugar on top. It really makes 'em dance a figgy jig.

You know how I love muffins and how much fiber moves me (both figuratively and literally...lol)
This might sound like a stupid question, but do you leave the peels on the oranges?

Mags - there are no stupid questions, just people that don't write clear instructions. Yes, whole oranges including peel but without the seeds. I'll change the recipe so it's more specific.
