Last night's dinner had to be quick and easy after our day on the road touring the countryside. I'd seen this recipe for what I call "cheater" pasta and had put it into my "must try" file. It makes good use of pre-made alfredo sauce as well as tortellini found in the dairy case and some veggies for a quick, tasty dinner. I have to admit it was the first time I'd ever used a jarred Alfredo sauce.
I used a jar of Classico's Sun Dried Tomato Alfredo Sauce, kicked up a notch or two with the addition of some white wine and crushed red peppers. Mixed with fresh asparagus, grape tomatoes and mushrooms, it was pretty darn tasty stuff, although I think the addition of some marinated artichoke hearts and more sun dried tomatoes would put it right over the top into nirvana. Download Easy Creamy Tortellini Primavera Shoulda' woulda' coulda' didn't, but I've made note of them on the recipe for you so for heaven's sake throw them in if you make a bowl of it, OK? Along with a salad and a glass of wine, I'd say dinner was pretty darn successful especially since we saved some room for a piece of that lemon cheesecake from the other night. Also, although the jarred sauce is very convenient, we all know it takes just minutes to make a scratch Alfredo sauce. Next time I have a yen for Tortellini Primavera, I'll be making it the old fashioned way. Kind of a SNOB, aren't I?
Speaking of bowl, this is a lovely bowl from Portugal that my friend Maddie gifted the big guy and I with. Isn't it a beauty? I have a feeling it is going to be a well used, super addition to JBug's kitchen.
Noted the lovely bowl right away!!!! Your friend loves you! Sometimes you just gotta get help from a jar - and there is nothing wrong with that! Hey - if it didn't taste good - they wouldn't be in business! Sounds like you had a lovely meal after a lovely day! It was pretty, too! Bet the cheesecake was even better after a day or so!
