Yes, people mint. It's beyond me why mint is reserved for lamb only and since I needed to buy some fresh mint for a favorite dish the big guy cooked up on his hunting trip (yes, I will share it with you one of these days) I thought I'd use the rest of it instead of putting it on the compost pile, if we had such a thing here in the desert. Now for you grammar teachers looking for an example of a run-on sentence to show your students, this last one would be a doozy wouldn't it?
This casserole combines browned chicken with garlic, mint, lemon rind and juice, parsley, and thyme (wonder where sage and rosemary went...joke...small joke...very small joke) all on a bed of rice. Make sure you use short grain rice rather than the long grain variety or it'll turn to mush - mine did. Darn. That and the fact that it percolated in the oven for a bit too long cause the man was late getting home made for a soggy mushy mess, but it sure tasted good! Download Minted Chicken Casserole
Honestly, the scent of the mint was irresistible; the hint of thyme and lemon quite exotic, and the skinless golden brown chicken thighs cried out for company. In other words, I sure as heck wish I'd had more than just 3 little iddy biddy chicken thighs to serve the two of us cause it was some good, but after all we've got a lot of ground to make up in the moderation department considering last night's gorging fest. Along with a spinach salad, I think we did quite well back on the wagon, don't you?
This looks lucious! Funny grammar humor!!!! You are very much so back on the moderation wagon - I am quite sure I know who only got one thigh! And you know what - sometimes you just need mushy rice in your life.
You have inspired me in many ways - and I have finally done it!!! I have started my blog! It is still in the development phase as I am learning digital photography and blogging and internet and all that stuff as I go. And I am formulating my own idea of what I want to produce as I go, also. Interesting to say the least!

I'm not a big user of mint but bought some the other day for another dish I'll be posting about soon, so this would be a recipe where I could use the rest. Looks YUMMERS!

Cathy & Mags - mint is the bomb and it really is amazingly good with chicken. Maybe a little chocolate mousse with mint for dessert and you'd really have it going your way! LOL
