I have a new purpose in life. My darling little Father In Law is just that "little", so I plan to put some meat on his bones over the next little while. I mean I easily accomplished it for his son, surely I can do Dad the same favor; however, it works both ways. As you know the big guy and I are on a "moderation plan" but I love to bake, and absolutely love desserts so Dad will be doing me a huge favor by accepting the sweetest efforts from JBug's Kitchen while I in turn get to cook and bake to my heart's content. Bonus! I hope I've convinced him because here comes effort number one and I haven't broken the news to him yet!
Over the past couple of days I've been making marmalade from the g'zillions on our citrus trees. Monday it was Kumquat/Tangerine and Wednesday it was Meyer Lemon. Now Dad's not crazy about lemon, but I figure I have him with this Steamed Marmalade Pudding that I created last year for the great white hunter and his sidekick, John. Course they went hunting and left me with the rest of the pudding - but this year not one crumb will pass my lips and lay claim to my hips. I promise you. On the other hand if it worked so well putting some padding on my posterior, surely it'll do the same thing for Dad. Right?
This golden beauty is really quite simple to make. Marmalade is mixed with a little liqueur - Triple Sec in my case and it's layered with a mixture that closely resembles a regular butter cake in a pudding mold. The whole lot gets steamed for an hour and half and comes out looking like a ray of sunshine. You'll have to trust me on this one cause I only remember that it is addictively sweet, moist and delicious. It's fabulous served warm along with ice cream or a thin custard sauce. By the way it freezes well and heats up beautifully in the microwave too. Sorry guys I gotta run. It's kind of hard to type with a dog in your arms. He made me a liar and had two more seizures last night. It's been a grind let me tell you and all signs are that he's not done yet, even though he's "maxed" out on medication. Just wish I could wave my magic wand and make him all better!
I love that make your own jam and marmalade from your own trees! I can only dream of that kind of space right now. The cake looks good, too!

GT - I have a 104 year old hoosier that I treasure and holds all my efforts in the canning department. I figure keeping it full is the best kind of tribute to a great piece of furniture.
Mags - yeah, he's sleeping right now. He was sleeping in my arms last night when he started again. From the way he acted yesterday, I should have known he wasn't finished, and I doubt he is today either. Lord help us! Thanks re the labels -easy peasy. Ya' want some with your logo?

Yes Cathy, it's fun to make things from what our very own trees provide. We just delivered the pudding to Dad and I think it was a hit.
