We're on a real cauliflower kick these days - course I guess you could say we're on a vegetable kick. Not only healthy and filling, they're plum easy on the pocketbook. I had planned to serve the rest of our lemon roasted chicken for dinner last night in a salad but unfortunately there wasn't enough left for 2 so I had to fall back on Plan B, which in this house usually means pasta.Oh darn - don't you hate when that happens? Ha.
We've had this pasta with roasted cauliflower before, thanks to Elise at Simply Recipes, and it is so good I've been waiting for an excuse for a repeat. This time I used bacon rather than the prosciutto called for in the recipe which meant I changed the roasting method a tad by putting the bacon and garlic in the oven at the same time as the cauliflower and tomatoes. I also left out the oil because there was enough fat from the bacon which was a good call. It was a fabulous bowl of ooohhh so delicious goodness without the usual heavy sauce we're so accustomed to. By the way, I apologize for the photo's quality but that darn bowl was steaming hot so it was kinda' hard to get a clear picture.
The big guy and I discussed this morning over coffee how much better we're feeling these days, a month into our new regime. Hey how can you not feel better when you're eating more fresh vegetables never mind fitting into the stuff from the back of the closet? As for this weekend - we've a special birthday dinner for my Mother In Law, and the big guy's huntin' partner John arrives on Sunday - the hunt begins next week. If you know me at all by now, you've figured out that I'll be one happy camper working in my kitchen over the next couple of days.
YUM... there's that roasted cauliflower that I love so much.
So...what are you going to be cooking/baking when the menfolk are out hunting?

No grumblings from the big guy about the lack of meat or was the bacon enough????? After a month I bet it was!!!! Nice looking dinner there, June!!!!!

Lea - the big guy loves this pasta likely because there's so much flavor PLUS he loads on the red pepper flakes.
Cathy - the cauliflower's beautiful right now isn't it.
Mags - you're my inspiration in the roasting/toasting department! I'm not sure what I'll be doing while the guys are gone - if I was so inclined I'd make ice cream every day (and post it)! LOL
