Friday nights are special around here and some more than others. I don't know what it's like at your house but every once in a while Friday's here cause a huge sigh of relief immediately followed by a martini or two. Last night's dinner was a very simple one, in keeping with the POET'S day theme (as in pooey on everything, tomorrow's Saturday). Course far be it from me to be the one to break the news to the big guy that it's the last shopping Saturday before Christmas. That won't do any good cause he'd still wait till the 24th. It is all moot this year though - we're not exchanging gifts. Just too darn many things on our need list - like a dryer, new stove, and a month in Oregon.
Quesadillas aren't new to anyone, so I won't go into too many details about how I made them. Let me tell you though they included barbecue sauce, caramelized onions, pepper jack cheese and the last piece of left over brisket that I was hoarding in the freezer. They were superlative, trust me although I may be saying that because I was exceptionally hungry. All I'd had to eat all day was a dark chocolate orange, but heavens don't feel sorry for me. I ate the whole darn thing! Man, I love Christmas! As for the guacamole and black bean salad - I've shared both of them with you before so I won't go there either.
Today's the day we do our big grocery shop for Christmas week so assuming we survive the crowds, screaming over excited children, murderous parking lots and snowbirds that have no clue where they are, absolutely no idea where they're going, and can't remember where they've been, I'll see you all tomorrow. TTFN!
Take a deep breath. A week from now it'll all be over. Isn't that crazy?
You fix a lovely quesadilla platter June. Too pretty to eat!

Thanks Mags. I sure do wish I'd thought it was too pretty to eat BEFORE the indigestion! LOL
