We're working our way through our gigantic Christmas ham, which is going to take awhile being as there's only two of us. One thing about ham though - you're almost unlimited with what you can do with the leftovers. Why, even Dr. Seuss can be used for inspiration!
We were craving pasta again, mostly because it's quick and easy to prepare and I remembered a recipe from the past that's kind of a take on carbonara without all the cream that usually goes into my version. I used to make this during my single years with bacon, so I figured it would work with ham. Download Pasta with Green, Eggs and Ham
Start the water boiling for your pasta, then saute a chopped onion in a little oil until it's soft and transparent. Add a little garlic, then some julienned ham and let it warm up slowly over low heat. Cook the pasta to just al dente, throw it in the ham pan along with a couple of beaten eggs with a dash of cream, fresh ground pepper and freshly chopped parsley. Add some parmesan cheese and dinner's on the table, just like that! It's not just any old pasta dinner either - it would make the Cat in the Hat sing with glee, would he!
Oh, I did dress it up with a bit of nutmeg and of course the big guy insisted on red pepper flakes, but personally I quite enjoyed the subtle flavors. Actually, it kind of tasted like quiche if you wanna' know the truth. However, if I may make a suggestion! Keep some of that water that you cooked the pasta in, and set it aside just in case you need to add some moisture to the pan. I didn't do that, but sure as heck wish I had. It would have made for a much creamier end product. Oh and keep your heat down or you'll end up with scrambled eggs. Other than that, dinner was on the table in a flash and it was completely satisfying.
Guess we're getting our pasta fix in before we start the big diet! Ah geez - who said DIET???

Ooh..another delicious pasta! Once my big 'detox/diet' is over.. I'm tucking into this one! However will you diet with all this delicious food?

I have lots of leftover ham around too. This sounds like a great way to use it. I like the touch of green and pasta is always welcome. Thanks for the idea.

I have a big pot of two kinds of parsley in the back yard and it's like the engergizer bunny - keeps growing and growing. Love the flavor it adds to pasta - or anything really.
