Can't believe it's taken me this long to post these special little beauties. At one time this recipe for Stroganoff Meatballs was part of our regular rotation, in fact I do recall wowing the big guy big time when we were first married. It makes a ton of food, so if you're not into left overs you may wish to cut the whole thing in half. I normally make the entire recipe of meatballs though because they're a great basic recipe and wonderful to have hiding in the freezer to morph into meatball sandwiches, or have with spaghetti. I cook them in the oven so I don't have to deal with the mess and splatter on the top the stove as they hiss and spit during browning. Just be sure to use fresh breadcrumbs, but if you must use dried, increase the milk to 1/2 cup and soak the crumbs first before you add the ground beef. It'll make for a much juicier meat ball.
The sauce is made up of caramelized onions and undiluted consomme (Campbells), but it seems to be at a premium to find these days, so if you can't find it use canned french onion soup instead. Regular beef broth just doesn't have enough flavor, unless you want to spend the time reducing a quart to 1-1/4 cups. Other than that, served on top of noodles and with a veggie on the side, this is a guaranteed hit. We had our meatballs with some pan roasted Brussels Sprouts - found them still on the stock at Trader Joe's over the weekend and just had to buy them. This picture shows just one end of the stock - the entire piece is about 18 to 20 inches long and gave up almost 2-1/2 pounds of perfectly sized, very fresh sprouts.
The sticker said they came from Salinas, CA which surprised me because the flavor of these little winter veggies is so much better when they're grown in a cooler climate; however, they were wonderful, sweet, nutty and delicious.
Wow..look at those Brussels sprouts. I've never seen them so fresh looking!
The stroganoff looks fantastic. I love this kind of meal and so does hubby. I could make a meal out of the meatballs themselves, but the addition of the sauce and noodles makes this especially tasty sounding.

Yup the sprouts are so fresh they still "snapped" when I took 'em off the stock. Amazing little hummers. The stroganoff is pretty darn good for an easy no fuss dinner and leftovers freeze pretty well too. That's important since the big guy'll be having some for lunch in the future.
