We were a little tired of turkey leftovers last night and craving a good feed of barbecue. Trouble is it rained most of yesterday and was cool - cool to us that is. The day kind of just frittered by ...a long afternoon nap, a couple of hours ironing, a little football - you know how it is. It just didn't feel right sending the big guy out in the rain to tend the ribs, so I put them in the oven instead. He complained not one bit!
Now, ya have to plan ahead for these guys - a little more than I did I must admit. I took the back membrane off the rack of side ribs, then rubbed in some cajun seasoning, and shoved them in a zip loc bag for a while. After languishing in the refrigerator for 5 hours they were placed on a rack in a baking pan. I added some apple cider and water to the pan, covered it tightly with foil then baked the ribs at 350 for 2 hours. They came out of the oven looking rather anemic, but after they were slathered in sauce and spent some time under the broiler, their appearance improved dramatically! Download Oven BBQ Ribs
Now - about the barbecue sauce. The big guy said it was good which is high praise coming from him cause his secret sauce is absolutely incredible. I'm going to give you the recipe as I put it together, but once he gets his mitts on it for fine tuning, I'll repost it. I promise!
We had our ribs with a small baked potato (one of which exploded rather well in the oven) and some slaw. This Citrus Broccoli Slaw is from a great little regional cookbook called Jackson Hole Cooks. Download Citrus Broccoli Slaw It has amazingly little fat (1 tablespoon) and is full of great orange flavor which went very well with the spicy ribs. It took all of 5 minutes to put together what with a package of pre-made broccoli slaw and all, but tasted like I'd really fussed a lot longer than that! In fact, this dressing is so good I'm thinking of making another lot of it to have on a spinach salad, maybe topped with a little left over turkey. mmm yum! Wonder if I'll EVER get tired of thinkin' about food.
I can't believe you let the big guy have the night off from grilling, even if it was to keep him dry. Such a good woman you are.
We're experiencing mind-meld again June. I'm working on an Asian turkey broccoli slaw recipe today. If it turns out and I can get a decent picture of it, I'll be posting it tomorrow.
