Friday nights are traditionally munchie night in our house and last night was no exception. We watched the mountains turn pink, had our martini's and enjoyed the flavor of two new recruits to the appetizer table - Lime Marinated Chicken Wings served with Guacamole and a very flavorful Bacon Artichoke Dip.
The recipe for the chicken wings is adapted from a Foodnetwork method attributed to the Deen Brothers and honestly while the "bones" of the recipe are great, surprisingly it missed the mark in the spice department. Based on the comments of others who'd tried it, I fiddled with the recipe enough that I'm re-printing it here for your convenience. Download Lime Marinated Chicken Wings Now, I know you're going to go "holy cow" when you see there's two jalapeno peppers in this marinade, but believe me - the heat just isn't there when the wings are cooked. There's plenty of lime flavor though and I gotta' say, it is darn good. We served the wings along with some guacamole as suggested, but it certainly wasn't a must when it came to cooling the palate, cause the palate wasn't even warmed up. In fact, next time I'll be adding a ton of hot sauce to these puppies to wake 'em up a bit. That said, they're well worth making, so give 'em a try and let me know what you think, OK? Oh, as you can see, they "dew" up pretty fast, so watch them to make sure you don't get them over browned and for heavens sake, don't forget to line your pan with aluminum foil to make cleanup easier.
Our second new recipe of the night was a complete invention on my part, based on what was on site and I've gotta' say it wasn't bad. Download Artichoke Bacon Dip Crispy bacon along with artichokes, sweet onion and a touch of garlic and a dash of hot sauce mixed into cream cheese, mayo and sour cream and finished with parmesan and swiss cheeses - it was well, it was just darn delicious. I served it along with some toasted flat bread, ritz crackers and a few taco chips but it would be great with fresh veggies too. If you're going to give it a try, be sure to drain the artichokes really well, or your dip will be too runny.
Now, as for this lovely Saturday morning - the sun's just coming up and I've a very anxious woof waiting for his morning walk. Gotta run! Happy Halloween everyone.
