Now don't for one minute thing we've changed the focus of this blog and decided to start baking. I mean BAKING? Normally, if there's any of that in this house unfortunately only one of us eats the stuff. Not that I don't love to bake, it's just if I don't make the stuff it doesn't have to pass my lips. I mean if it comes to a choice between drinking wine or eating cake, I'll pick the wine thank you very much. Since we had a repeat last night of Southern Illinois BBQ sandwiches, I thought I'd take the opportunity to write about breakfast instead.
You see, the big guy's turning over a new leaf. You can teach an old dog new tricks - at least this one! All because of elevated cholesterol, his love of bacon and eggs for breakfast has taken a hiatus. In exchange he's eating healthy breakfasts most of the week - like hot oatmeal, or fruit and low fat yogurt, or muffins, or waffles and there hasn't been any complaining, yet! This week's special were Double A Muffins made with apple sauce and chopped dried apple. They're loaded with oatmeal and wheat bran, have very little sugar and just a mere tablespoon of vegetable oil. In other words, they're quite healthy and not at the expense of flavor either. Big bonus, they're also moist and quite filling - must be the oatmeal, because they do tend to stay with you most of the morning. By the way, just a little hint. For heavens sake chop the dried apples up very fine. If you don't you'd better add on another 10 minutes to your breakfast time allotment because these babies'll take an awful long time to "masticate"... that is chew in case ya' really wanna' know.
Oh you know how I loves me some muffins! I can't wait to try these. I'll think of you as I'm masticating. (why does that sound so dirty?...LOL!)

You evil minded soul. LOL. These were OK though I think they'd be better as Triple A's with a little fresh apple too. Wait till you see this week's muffin model though - stay tuned!
