The big guy informed me this morning that today's the second day of dove hunting season. Yup - I'm married to a hunter. He loves getting all dolled up in his huntin' gear and taking to the wilds to bring home some kind of bacon. Fortunately, the sound effects of his excursions often go like this - "bang...sh*t....bang...sh*t...bang...ah sh*t".
Suits me just fine, cause I'm not much into wild meat. Just imagine what an incredible shot you have to be to hit a dove that's in the air. It's not like you've got a target the size of a moose to hit and they move a heck of a lot faster than a moose does too. Course we'd be hard pressed to find any moose(s) around these parts, and Georgie easily takes care of the doves in the back yard though I wish she'd pick up after herself.
The big guy has had some success at hunting dove. Likely just enough to keep him going back for more. Rest assured that's not what went into last nights stir-fry, thankfully.
This easy, colorful stir-fry with a hint of spicy heat is from the Best of Bridge Series of Cookbooks, The Best of the Best and more. While the Best of Bridge Series cookbooks are now out of print, you can still find them on Amazon - I just checked. I know, I know...my Canadian roots are showing, but they're well worth purchasing as they're chock full of good, well tested recipes and lots of laughs too. This particular stir fry is a great "base" recipe and while it calls for cashews, as you'll see peanuts were the order of the day in our kitchen. You can also substitute pork for the chicken and add other vegetables such as broccoli and water chestnuts too - whatever your pleasure. We had it with plain old white rice on the side, but it's great on soba or rice noodles too. Download Sweet and Spicy Chicken Stir-fry
Just a hint - it's wiser to prep all the ingredients in advance before you start cooking because the cooking time is so short. Make the sauce in advance, then prep the chicken & cut your vegetables. If you put the rice on before you start cooking, by the time the rice is done in 15 minutes, so are you and dinner's ready. Enjoy!
So, did you really use those chopsticks?
We love stir-fry here. And you can't go wrong with anything that has peanuts in it.

Chopsticks - not me. Not coordinated enough but the big guy did and he still finished dinner before I did (including seconds for him) Ha. I'm with ya' on the peanuts too.
