Friday morning and it's only 70 degrees. That is amazing. I've the AC off and the doors and windows open. It's just lovely. We had the mother of all monsoon storms last night and I really wanted to tape a video to show you, but instead just stood there amazed. For those of you who've never seen a monsoon storm and believe it really doesn't rain in the desert, guess again. These storms are awesome. The heavens literally open, then just as quickly the rain and wind will stop. It's like God shuts off the tap, then says oh heck, I'm going to give 'em another go and it all starts over again.
What it means is that the big guy will have quite the drive to work this morning. You see there are very few bridges over the washes, and when the washes flood the roads are closed (sometimes for days), so he's not going to be in the best frame of mind by the time he finally gets to work. From my point of view, everything looks like its been through a car wash - the cactus are green, the palms shining and the roads and sidewalks free from dust. The only thing that are out there are swarms of flying ants - yeah, there's one right over our house at the moment. When the swarms land, they turn the sidewalks and roads black right in front of your eyes. YUCK.
Well I guess by now you're wondering what we had for dinner last night...unless you were smart enough to read the tag line in which case you already know. Dahh!
As you've likely noticed unless you're new to this site, we like to experiment, A LOT. I had never had a Philly Cheesesteak Sandwich. Even though I've been to Philadelphia, it's not something that was on my list of must haves at the time. I did a little "Googling" and I'm amazed at how many different versions of this sandwich exist. Some say with peppers, some say without. Some say with cheese whiz, some say provolone only...yada, yada, yada. I ended up pulling an Emeril recipe off of Food Network's site http://www.foodnetwork.com/recipes/emeril-lagasse/philly-cheese-steak-sandwich-recipe/index.html. Of course I made a couple of changes - I used a mixture of red, green and yellow peppers instead of just green. We love the difference in flavors of the peppers, and I had them on hand so why not. I also grated three cheeses and mixed them up a bit - mozzarella, monkey jack and velveeta. Hey, I was clearing out the cheese drawer in the refrigerator. Oh we used "ugly steak" from Dickman's Meats here in Tucson instead of rib eye steak. Don't ask me where on the cow the ugly steak comes from - the big guy thinks it's likely skirt steak, but oh boy, it sure is tender and very tastie.
The result was a pig out of major proportions. Holy cow, these are some good eats. I be thinkin' we'll be heading to the land of the liberty bell again in the not too distant future - that is after we diet off the pounds. Darn, why can't we eat to live instead of live to eat?
Why, oh why did I read this on an empty stomach. And it's not like I wasn't forewarned... I knew you were making this! I could eat my computer screen right now, swears. That looks so good June! Guess I'll go reheat the risotto and pout.

Mags, I'd sure settle for some of that risotto in fact I'd even eat it cold, it looks so good. As for your PB cookies - darn sinful. Geez, if we were neighbors, we could hit each other's kitchens on the way to Curves. Ha.
