I absolutely love the color green or should I say colors green. It amazes me the number of different shades there are and how the quality of light really changes the tone. Say for example the color of fresh rain washed grass compared to the deeper tones of a palm...course that's assuming you've even got a palm. We don't have grass so I'm really working from memory here, ha. How about the yellow/green of avocado next to the deep rich shade of fresh romaine lettuce and the minty color of peas. That get your attention?
I was so missing the color green yesterday, I just HAD to make this salad. While the cat's away, this mouse likes to create things in the kitchen the big guy doesn't much care to eat. That's the reason behind the smoked salmon Saturday night and last night's Green Pea Salad. This salad is one of many versions that can be created from a bag of frozen peas, which goes to show they're good for more than just fixing the odd boo boo or two. In this case, defrosted frozen peas are combined with sweet onion, bacon, and cheddar cheese, then dressed with a mixture of mayo, sour cream and lemon juice. You'll notice the recipe also calls for fresh dill, but darned if I didn't forget. No matter, it was still delicous and since it holds and mellows wonderfully in the refrigerator, I'll add the dill to the salad I have for lunch today. Gotta' get my pea fix in before the big guy gets back in town.
Oh I love pea salad! The next time the big guy's out of town I'll come and we'll make all those girlie frou-frou foods that the men folk don't like.
