Don't you wonder sometimes why you don't make some things more often? That's how we felt about last night's dinner. If you recall, we had roast chicken for dinner on Wednesday night so there were a couple of very moist, lovely little chickie tits leftover. Now I could have made chicken salad, or risotto, or enchiladas but if you really know me, you'll know that I absolutely love, love, love pasta, so it won the draw.
This particular recipe was adapted from Palm Country Cuisine, the Junior League of Greater Lakeland Florida cookbook that I mentioned the other day as well. I usually try and cook from the same source more than once in a week, and as I've mentioned, I've a huge number of cookbooks to draw from. Unfortunately somehow it's easier to pull ideas and recipes from internet sources, but I'm trying to turn over a new leaf and give you all the benefit of this great collection. A little bit of chicken, a little bit of pasta, roasted red peppers, mushrooms, green pepper, onions, and alot of sherry combined to put this dish over the top.Download Chicken Tetrazzini By the way I used light, low fat chicken soup and sour cream instead of the full bore stuff to save a few calories.
The big guy chose to add some red pepper flakes and GET THIS...green peas as a garnish to his second bowl of this superlative casserole. He says his tastebuds "is going down the wrong path"...ha. I just figure it means he's finally got some.

If you could have heard him when he admitted the peas were delish you'da laughed your head off. He wasn't too fond of peas as a kid, then he drove a pea combine in the summers during high school and really hated them after that. Lookee now!
