NEWS FLASH!!! Pasta doesn't always have to be in a heavy cream or meat sauce and loaded with calories. Believe me, it's a new revelation in this household. We're rather used to pasta with heavier sauces, but recently we had spaghetti with lemon and fresh basil (see Download Shrimp Fra Diavolo with Lemon Spaghetti and absolutely loved it. Now I'm on a mission to find lighter sauces. Ya' think we might have been stuck in a rut by always making the same things over and over?
Last night we tried Pasta with Roasted Cauliflower from one of my favorite blog sites, Simply Recipes http://simplyrecipes.com/recipes/pasta_with_roasted_cauliflower_and_prosciutto/ I've had this on my "to do" list for quite a while as a means to get more vegetables into us, and there's no better time to try a vegetable based recipe than when gardens are at their zenith.
All I gotta' say is...what a great way to slip cauliflower into dinner! Roasting gives it a whole different flavor; mild, sweet, a little nutty and just plain tastie. I made a few adjustments to the recipe by adding more garlic, pancetta instead of the prosciutto, campanelle instead of orecchiette and some red pepper flakes, but that's minor. The recipe's a real keeper! I also had to roast the veggies under the broiler rather than in the oven which resulted in the tomatoes being a little too "carmelized". I'm afraid that not only is my refrigerator on its last legs, but the stove's being a little persnickety too. Never fails, does it?
The big guy (yup, he's finally home) really loved the dish. He didn't even notice there's only 4 ounces of meat in the whole thing - he's such a carnivore. Honestly he kept saying over and over how good it was and is anxiously looking forward to lunch when he can have more. As for me - well I could live off the stuff. No problemo!
