Yesterday was another shoulda' day. Dinner was a combination of all that was left in the refrigerator because today's shopping day. I know you're likely looking at this plate and wondering what the heck I was thinking. Well, I shoulda' listened to ya.
I pounded the heck out of some skinless, boneless chicken breasts, applied salt and pepper, and stuffed them with a mixture of 4 oz. of goat cheese, 1/4 cup chopped sun dried tomatoes, and 2 tablespoons each of fresh chopped basil and parsley. Rolled, tied and covered with butter, they baked in a 350 oven for 30 minutes. I shoulda' cut them into medallions so they'da looked better on the plate. Didn't even think of it until I was having coffee this morning. Oh well. Great flavor, lousy execution.
We had the chicken along with a couple of newked purple potatoes, some steamed baby broccolini and creamed bella mushrooms. Now, the mushrooms shoulda' been served with a nice medium rare steak sprinkled with a little maytag blue. Ah, that woulda' been wonderful. Instead, they looked a tad out of place on the plate along with the chicken.
I simply sauteed a shallot in some olive oil, added sliced bella mushrooms, turned up the heat and sauteed them all together for 5 minutes; added a sprinkle of Herbs de Provance, some garlic flakes, coarse ground pepper and a shot of sherry, then gave them another minute in the pan. I finished the pan with about a 1/2 cup heavy cream and a pat of butter. Oh momma, them 'shrooms was some gooood! They'da been incredible as a strudel filling or topping a puff pastry tart. Should'a.
You should'a smashed those purple taters and slathered those marvelous mushrooms over the top.
I personally love meals like this...little of this, little of that.

Mags, you're right. I shoulda'. Notice there wasn't any chocolate cheesecake to clear from the fridge?
