Last night's dinner was an easy version of Beef and Bean Enchiladas, and I'd say hola (hello) to them again many, many times given the choice. These are guaranteed good crowd pleasers, although the crowd in our house last night consisted of just the two of us. Hey..sometimes even a crowd of two is one too many. I'd happily get into a fork fight with the big guy if it meant I could have one more enchilada - ha.

We love it. I think you'll agree that these look fabulous and honestly they tasted every bit as good as they look. I swear there are a b'zillion different ways to make enchiladas from out of almost anything in your kitchen, including left over chile verde or pre-cooked chicken. They can be made from either flour or corn tortillas, with a red or green chile sauce, and even with or without cheese. Personally I don't think there's a bad one in the bunch, in fact if you check the index you'll see I "blessed" you all with my recipe for a chicken version way back in April.
I served last night's version along side a kicked up "withs" tray that I called a salad, but really is just a whole bunch of good garnishes. Of course I also served some sour cream and more hot sauce on the side too. Best of all, there's lots of leftovers to enjoy for lunch today (and tomorrow).

Those enchiladas look killer! I made them recently using Tyler Florence's recipe. The sauce is made from tomatillos, which was a new thing for me to use. I felt like I'd really broadened my culinary horizons.

Love trying out new recipes and it's a really easy way to travel the world. No airports or crying babies. As for tomorrow...you'll just have to check & see, now won't ya.
