Breakfast for dinner is nothing new, although it's not likely you'll find it in this house unless the big guy's out of town. He's kinda' traditional in that respect. Personally I happen to love having bacon and eggs for dinner, but there's two of us here, and silly me in a very weak moment I asked the Judge to write "obey" into our wedding vows. What a stretch that's been!
This casserole is a great way to use up left over bread - I used some french bread I'd stuck in the freezer, and it's kinda' like bread pudding in a way. I made the mistake of cutting the recipe down and making it in two shallow ramekins, so when you're doing it please just follow the recipe. Still, the french toast came out crispy and yummy on top and creamy on the bottom. The addition of the cream cheese really makes a difference and I've even made it before with fresh blueberries sprinkled on top of the cream cheese - in fact, I've made it with stale croissants and THAT is unreal. Can't go wrong with all that butter, can you? Guess what I'm trying to tell you, is that it's a pretty basic recipe, so fool around with it a bit and you'll come up with something out of this world. As for breakfast yesterday, we had our french toast along with bacon that I sprinkled with a little brown sugar, placed the strips on a rack on a large sheet pan and baked in the oven along with the French Toast. Both items were done at the same time and really, the bacon was all carmelized and crisp and kinda' sweet...as if it's not good enough done the usual way in a frying pan or the microwave. It is absolutely delicious done this way and a perfect foil for the toast. Sorry there's no picture of the bacon, but trust me it's darn tastie. Once again, if you're like Whitney and think eggs are slimy yucky things, just use egg substitute (aka Eggbeaters) in exhange for the fresh eggs. I see absolutely no reason why Eggbeaters wouldn't work out just fine, though I've never tried it before.

I made eggs and toast last night for dinner, but the rest of my family agrees with your big guy that eggs are to be eaten for breakfast only. I must have forgotten for a brief instant last night that I also had the word "obey" in my marriage vows. I'm claiming forgetfulness and exhaustion just this once...lol
