Sent the big guy out yesterday with the shopping list while I stayed home and groaned. I had the punies all day. He did a great job getting all the stuff on the list and not much that wasn't - no chocolate or ice cream. Darn. There was only one small issue. He had a slight miscommunication with our favorite butcher at Sprouts and came home with 3 pounds of Alaskan Cod....yup 3 pounds. Now what do 2 people do with 3 pounds of cod you ask? I guess we'll see.
When I think of cod it brings back memories of cod liver oil. That was my Mother's cure all for the punies, and not one that I've maintained I might add. To this day I can't abide orange juice with pulp in it because that's what Mother would hide the stuff in...oh it was wicked. Thankfully cod doesn't taste anything like cod liver oil and last night's was wonderful, even to my tender sensabilities.
The big guy seasoned the cod with salt and lemon pepper then did the three dip thing - flour, eggs mixed with dijon mustard, then panko crumbs. He browned it over medium heat, then finished it in the oven (about 10 minutes). He whipped up some tartar sauce to go along with it and even made some lemon spaghetti - our new favourite thing. Heavens he did all of that and cleaned up the kitchen after dinner too. Spoiled, aren't I? Being anywhere near that side of the house held no allure for me. Absolutely none, zero, zilch.
As for the two something pounds of cod left in the fridge - it's going to be poached and then frozen for future reference. Thankfully it was a really great buy - very, very high quality, mildly flavored with flesh white as snow. Yes, I do remember what snow looks like. Kind of like riding a bike and cod liver oil. It's something you never forget.
I think those punies are going around. I've felt that way the past couple of days and that is eggzactly why I had eggs for dinner last night.
Big guy does a nice job cooking. You are definitely a lucky lady!
