My virus software is doing a scan at the moment so the computer is a tad slow. So's the author. Yikes, this is one of those days when I've got nothing to say. There are many that would scoff at that remark, one being the big guy. He'd likely make some comment like...well you did a pretty good imitation of being a chatterbox over coffee this morning, and darn he'd be right, again.
Last night's dinner was from a couple of different sources. The Moroccan Couscous and Chickpea Salad came from www.othersideof50.blogspot.com, a site I recently discovered, though I can't remember how. Lucky us that I did find Mags, because her blog is funny, sometimes irreverent and the food she cooks is incredible. Oh that we were neighbors. I think we'd have a lot of fun together though there might be far too much jocularity. As you can see from the picture, couscous is combined with dried cranberries, orange bell pepper, sweet onion, spices and chickpeas in an orange vinaigrette. The flavors are fabulous and it was delicious along side the orange chicken. I goofed though and cooked the pepper and onion too long so when you make it, don't make that mistake, OK. I think next time I'll add a few dried apricots to the mix and maybe some almonds too because the crunch would be lovely, but I'll have to leave out the chickpeas. After 9 years of marriage, I just found out the big guy doesn't like them. How's that for communicating?
The chicken's a real winner too. Skinless, boneless chicken thighs are browned, then finished with an aromatic sauce of orange juice, chicken stock and whole grain dijon mustard. A spoon full of hot sauce adds just the right amount of kick. It's another Bon Appetit recipe from http://www.epicurious.com/recipes/food/views/Chicken-Thighs-with-Creole-Mustard-Orange-Sauce-5665 Along with a fresh fruit salad of assorted melons, pineapple and blueberries, it was another smile worthy dinner in the house of JBug and the GMan.

Your chicken thighs look divine and I'll be adding them to my ever-expanding list of recipes to try.
