Yesterday was possibly the 18th most relaxing day I've had since we've been here. After getting the cabin somewhat in order for our upcoming visitors, taking a quick run into Walport for more groceries, and whipping up a peanut butter pie (recipes & pics later), I spent the balance of the day stretched out on the sofa in the sunroom with the dog on my feet and a book in my hands. It was lovely. The big guy passed the day at the dining room table, on his computer. He's getting everything ready for the new class he'll be teaching. I figured we've done pretty well that he hasn't had his head buried in his books before now. That means this "vacation" has been a good one.
Last night's dinner was a crisp salad on local greens, cucumber, tomato, onion and cheese topped with a grilled burger and a crown of bacon and grilled onions. The big guy cooked the burger and toppings and I made the salad -a joint effort enjoyed by both of us. Low carb it was, though certainly not calorie free. Hey we're trying to be good but it's happening in stages. We'd better do something or we'll need seatbelt extenders in the Jeep for the trip home.
Now about the visitors - I was told not to fuss. Ya, right. I've got the aforementioned peanut butter pie, a pan of cinnamon buns, 4 pounds of shrimp for cajun shrimp, a very large sourdough bread, 2 pork tenderloins to serve with salsa made from 2 fresh mangos, a peach, a red onion and 2 serrano chiles, 12 - yes that's right 12 fresh corn on the cob, and a partridge in a pear tree. Trouble is the visitors aren't coming today - "maybe tomorrow".
It's possible I'm an idiot.
Or it is possible you are the best hostess EVER. That is my vote anyway!
