Yesterday we went to visit friends in Lincoln City and enjoyed afternoon Tapas followed by a fabulous grilled salmon.
Tapas originates in Spain and actually means small plates involving a variety of appetizers and munchies. Lynn our hostess put together an incredible tray of goodies including marinated shrimp, salsas with chips, a selection of cheeses like wasabi cheddar, hot pepper colby (I think), a lovely soft creamy brie, as well as an assortment of pickles, olives and pickled asparagus. Sorry we didn't take pictures, but we sure should have because the tray full of choices was truly beautiful.
After a windy walk through the streets of Lincoln City, Paul and Lynn served a flavorful grilled salmon, marinated in a magic jerk marinate - magic because I surely can't get the big guy to eat salmon but he really enjoyed this one. Be sure, I'll be asking for this recipe to pass along to you. Along side a casserole of tortellini in a tomato sauce, a lovely fresh salad and hot buttery challah, never mind great conversation, dinner was absolutely delicious. What can I say - I'm kind of running out of adjectives to describe perfection. Desert was a slice of rich chocolate raspberry torte with ice cream - a celebration of our host's birthday. It was a really wonderful evening!
The drive home in the setting sun was peaceful and beautiful. What more is there that you haven't heard before - this place is truly amazing -friendly people, beautiful gardens, incredible scenery and the ever changing Pacific. It all grabs your heart and holds on tight.
Now, should I use threats, a bomb or yell BREAKFAST to get the boys off the sofa?
