Another wacky Wednesday over with. Don't ya' know some days you should just hide your head and let the world see you on Thursday. That's how I felt today. Course I had a better day than Max did - he was sleeping in his favorite spot on the desk, rolled over and darn near rolled right out the window. Thank goodness the screen held on one side otherwise he'd have been kissing the dirt never mind the lizard that lives under the Bird of Paradise. Now that's saying something when you've had a better day than your dog has!
I've been meaning to try another savory tart recipe because they really do make a great dinner on a hot night. Light but substantial, well substantial enough when you eat more than one piece! There's no meat in this one - I do manage to sneak the odd vegetarian meal in every now and then.
Another recipe from Bon Appetit, this tart not only looked and tasted yummy, it left the door open for almost limitless possibilities. The filling ingredients are a great base. Use your imagination and build on it. For example, the addition of blue cheese in place of mozzarella would be wonderful, and with some roasted red peppers - oh yeah. Or try carmelized onions and gorgonzola, or all goat's cheese, or what about ham and cheddar. I used purchased puff pastry for the crust per Bon Appetit's recommendations, but honestly in the time it takes to put a good savory crust together, it's hardly worth buying puff pastry. Also, although there's a great method of oven drying fresh tomatoes in the recipe, I used some dried cherry tomatoes that we produced on our own last year from our little garden. I plumped the dried tomatoes up with hot water, then added minced garlic and some Italian seasoning before I put them on top.
The big guy said he thought the flavors were really good. No surprise that he also mentioned he'd rather have meat. Ya, well so? We won't tell him that he just ate another "quiche" now will we?
