The big guy and the BBQ did the work again tonight as he cooked some awesome chicken. This time his hunting partner, John, provided the inspiration with a sweet, buttery sauce including some garlic flakes that turned out just like carmelized garlic candy. Yumm!
I made an herbed warm potato salad to go along with the scrumptious cluck. A great change from the old fashioned mayo variety, this salad is inspired by an Ina Garten recipe that I've made many times. Small potatoes are steamed until just cooked, then coated in olive oil and fresh herbs, mustard, garlic and shallots. The addition of roasted red peppers and haricot vert make it a great way to showcase other vegetables (although I did have to pick the green beans out of Gman's portion). What a wimp. This salad has endless possibilities - try adding some fresh asparagus or marinated artichoke hearts and see what happens!
