Hey, we're still in Italy if only in our dreams! Tonight's dinner was a celebration of summer and all that's good about it. I see that summer's taking its sweet time arriving in parts of the continent, but hang in there people. Just think how much experience you'll have planting and re-planting your garden. My sister in Edmonton used to grow the most incredible basil in a hydroponic garden in her kitchen window where it was summer almost year round. It sure would come in handy for this panzanella salad.
This salad makes great use of crisp summer veggies, like cucumber, beautiful ripe tomatoes and in this case, peppers too. There a lots of different recipes out there for Panzanella Salad and I'm guilty of combining more than one to make my version. Some have peppers, some don't. Now, how to describe this salad. It's summer on a plate - in fact, quite honestly, I thought it was even better than the gorgeous king crab we had along with it. Oh, that's a stretch isn't it? OK, let's change that to "equally as good as the king crab". About the crab, Albertson's had it on sale for the incredible price of $8.99 a pound. Yes, that's right, and for $17.00 we had 4 beautiful huge legs, certainly more than enough for the two of us. What a treat! Shop those sales flyers people. It's definitely worth the effort.
