We love chicken salad around here and asparagus is right up there on the list too, so putting the two of them together seemed like a really intelligent thing to do. Speaking of intelligence, don't you wonder sometimes about the things people say?
The other day I had to go to the pound to renew the Maxer Dawg's license. For some strange reason they had him listed as a special needs companion dog. Well he certainly is both of those but not in the way they meant. When I confirmed that he was just a regular neutered male mini schnauzer, the lady asked very loudly, and I quote: "are you sure your husband doesn't have any mental or physical disabilities?" Now come on! Was I supposed to answer this with a straight face? I must have had that deer in the headlights look because the 20 or so people waiting in line were laughing uproariously when I said "physically he's fine, but I can't answer re the mental part".
Now, about dinner tonight. It was inspired by a recipe in Cooking Light that called for curry powder, but since we've already gone there and I'm loathe to repeat this early in the blogging game, I thought lemon, Dijon mustard and Herbs de Provence would be a great combination. I used left over barbecued chicken; however, feel free to quick poach some chicken breasts or even use a rotisserie bird from your local market. Along with blanched asparagus and some chopped red pepper, onion and fresh parsley, this is a pretty healthy dinner. Oh, it tasted great too. It would have been really wonderful with a glass of sauvignon blanc and a croissant, but today was the one day this week we were watching our caloric intake. Such willpower!
I can't wait to hear hubby's comments about the visit to the pound!

I got "the look" and a laugh. I think he was just relieved that I didn't come home with another dog. I'm sure he'll find a way to pay me back when I least expect it. Ha.
