We've been craving cool ya' know and cool this week means Tortellini Salad. Today was grad day - waving goodbye to students isn't always easy. I mean, there's some you grow quite attached to. I always manage to shed a tear or two watching graduation - it's exciting and wonderful and there's so much life ahead of them. It doesn't seem that long since it was our turn and here we are looking retirement in the face. Yikes..we're not going there - ha, no wonder the tears!
Dinner tonight after an afternoon in the heat really needed to be something cool and quick, and I admit to making it and putting it into the fridge to chill before we left. I made the salad with cooked shrimp this time, but often use pepperoni and add different veggies - like zucchini, cauliflower, carrots - really just about anything. I could have made an italian dressing to go with it, but used good old Kraft instead. OK - so I'm lazy.
Just a hint - blanche the broccoli before you cook the tortellini. It turns the broccoli a very appetizing shade of green and seems to help get rid of some of the "gaseous" qualities of this particular vegetable. Download Tortellini Salad
But ya' know, according to the NDDIC (National Digestive Diseases Information Clearinghouse), the average person produces 4 pints of gas a day, and passes it about 14 times a day. So quit blaming the dog and start accepting responsibilty - after all, it's perfectly normal! You know, it's too bad we couldn't harvest it though - I mean, then we wouldn't have any energy conservation issues, would we ? Wonder what they'd give you per gallon for this stuff - I mean at a gallon every two days, you could be sitting on a gold mine. OK...I'll stop, if I must!
