Now, I know you wish you lived here, or at least in the neighborhood so you could enjoy the perfume coming from our back yard. I mean, honestly just look at this!
I'm sure we must drive our neighbors nuts sometimes and admit there are occasions we do it on purpose. Take this morning for instance - Gman cooked bacon, eggs and grilled onions outside on the flat top. Is there a more recognizable smell anywhere than bacon cooking? At 7:00 am on a Sunday morning...well!!! Eat your hearts out, people, cause you can't have my bacon.
As for the pork - you wouldn't believe how incredible this baby was. And the crackle - oh Joy! Since the majority of the work was being done by the big guy on the Weber, I thought I'd try something new in the inside kitchen. Course it is Sunday and it's got to be easy. That's the rule.
This sweet potato salad was quite good. I cheated and cooked the potatoes in the microwave and also newked the bacon too, though if I make it again, I'll roast the sweets and fry the bacon for more flavor. The combination of bacon, sweet potatoes and pineapple was really good and with the macadamia nuts for crunch, it was a pleasant change from the usual potato salad. Download Sweet Potato Salad I'm not sure that it wouldn't benefit from some dried cranberries or raisins too. Course you could also leave out the mayo and mustard and it would be fine, but then it wouldn't be a salad, would it?
GMan also grilled some fresh pineapple to serve with the pork. You've got to try it if you haven't done it yet - pineapple is wonderful grilled and if you've any leftovers, it makes an incredible salsa. By the way, the bark on the pork butt was amazing - and no, it is NOT burned. I mean, what does the bark on a tree do for the tree - protects it, right? Well, that's exactly what the bark on the butt does too - keeps it moist, juicy and quite wonderful AND it tastes really incredible!
