We're having friends for dinner tonight so I'm writing this post earlier - in fact, before dinner. After all, I want the opportunity to spend time with our guests, rather than leave them to their own devices...and no, I'm not afraid they'll abscond with the family silver (as if we have any), but this is a "vetting" of sorts, and I'm afraid I'll miss too much of the fun.
You see, one of G'Man's past students is getting married next month, so we're meeting her man tonight for the first time. There are a group of the big guy's former students who have adopted us...in fact, if they're not careful, they're liable to end up with all our stuff when we leave this earth. I mean, that's the deal about not having kids of your own, isn't it? Who do you leave Grandma's quilt and the cookbook collection, never mind the bear rug and the moose antlers. I know it'll be junk to some, but they're our treasures. Eclectic? You bet! We love "our kids" bunches and though they're everywhere we mostly manage to keep in touch. Spread out - I mean SPREAD OUT...they're all over the globe. Ireland, Argentina, Arizona, California, Illinois, New York, New Jersey, Florida, Kentucky, Ohio, Washington State - they all make us proud on a regular basis - how lucky are we? The benefit of having a huge and growing family, without having to pay any of the college tuition!
Dinner tonight is mostly a Mexican fiesta, so I wanted something cool and refreshing for dessert. After looking for hours for inspiration through tons of books and magazines, I came across this recipe for a Lemon Meringue Ice Cream Pie with a pecan crust. It looks glorious and I just had to try it. Here's a picture of it, before it gets cut! I'll give you all the low down later. Meanwhile, happy Saturday! Hope you're with someone you love!
I've been meaning to finish this post for a couple of days. Sorry 'bout that! This is SOME pie! The layer of tart lemon curd between the silky sweet vanilla ice cream is a real taste sensation. Dessert is the most important course on the menu in my books, and as for lemon - you can't beat that. We're lucky enough to have a regular supply of these golden orbs from our family. This pie was really special!
