Mmm..Monday after all the madness. Boy it's incredible how old you feel after a busy, busy weekend. Think I could sleep for a week but there's just too much to do and too little time. One thing was a certain - I sure as heck wasn't doing any cookin' tonight!
Nope - thankfully dinner was all set because we ate leftovers. Hey..ya just can't throw everything out, so we had a repeat on Saturday's dinner with brisket, mac and cheese and salad. What can I say? I don't normally eat leftovers, but what's a girl to do when she's sick of the kitchen. Leftovers conjure up memories of the hash my mother would make which included most of what was on the top shelf of the fridge for an unknown length of time. I just can't do it..not even with "ketchup". GMan on the other hand has leftovers almost every day for lunch and never complains. There's even the odd comment from his co-workers as to the aroma from the microwave. This time though, they're SOL, at least in the brisket department because it's all gone; however, if anyone's interest in about 10 pounds of beans, they're welcome to them.
I am not going to subject you to a repeat performance of pictures because YOU don't deserve leftovers. I did though want to comment on the Rhubarb Cake. I told you I'd do that after I tried it, so here you are. I had it for breakfast right after my 45 minutes on the elliptical. I can feel the wind from you all collectively shaking your heads in disbelief. I know..but didn't I promise I'd tell you how it was? I can't procrastinate over everything, and certainly not cake.
For all of you anxiously waiting for your rhubarb to ripen, plan for this as a great way to rid yourself of some. What a super cake...so darn easy and honestly really delish. Download Easy Breezy Rhubarb Cake I don't usually use cake mixes cause I'm kind of a "scratch" kind of person, but just this once I'm really glad I did. You could experiment a little and add some strawberries or even some pineapple on top as a garnish if you wanted to have some extra flavor, but it's fine just as it is. Point of interest - that is Cool Whip, not the real Mc'Coy. One thing you'll see from this little hunk of baking magic is that, as it cooks, the rhubarb goes to the bottom along with the cream to form a custard and the cake rises to the top. Isn't that incredible and darn...it is yummy!

can just find the rhubarb, will try it. One
of my favorite things.

Sprouts just had some fresh and Bashaws carries it (freezer section with all the other frozen berries & fruit).Seems a shame it's so hard to find when it's the easiest thing to grow...anywhere but in the desert, that is.
