Diet, what diet? Uh huh, I know. The May bikini diet was supposed to have started, but as with many good intentions, it's been delayed (like say by 10 years or so). Hey, aren't I the queen of procrastination?
Busy Monday. I'm getting ready for our big party coming up on Saturday and no I'm not going to tell you what I did today because you'll read about it all later. Let's just say there are other priorities and dinner was way, way down on the list. And even though the jeans are getting tighter and tighter, I went for something quick and easy for dinner tonight. High of 97 today, 100 tomorrow, 103 by party day - good heavens, the heat is on. Needless to say, it's HOT in the kitchen tonight, because the oven's on too. But you know what - our kitchen faces south on one side and west on the other - it's flippin' hot anyway, even with the air conditioner on.
I can't resist a recipe with stuffing - even stove top is OK in my books, and any excuse to have cranberry sauce. Dinner tonight is adapted from "Idaho al la Carte" - yup, I know AGAIN! Hey, if you ever get a chance to buy it, do so. It'll be a great addition to your collection. Not only are the recipes wonderful, but it's a great read too. Kinda' makes me want to pack my bags and head for Sandpoint or Priest Lake.
This recipe goes together and it's oven ready in a flash, leaving you lots of time to pretend that you slaved over a hot stove making dinner. Download Chicken and Stuffing Casserole It's also a good choice for casual entertaining. I've never had anyone complain about it, that's for sure. Now if I had my druthers, we'd have it with green peas...mmm.
Hi Junie this is a great meal. I am thrilled that my oh so very slow dial -up worked very fast for this recipe. I am enjoying your blog .Wish I was closer so I could adopt one of those little guys.
