Hey it's Kentucky Derby Day and time to celebrate. One can't live on mint juleps alone ya' know. Actually, my guy thinks juleps are a perfect way to ruin good bourbon and I would tend to agree with him so hot brown sandwiches seemed like a good candidate for an early dinner.
Apparently, hot browns were created as a "midnight snack" by a Chef at the Brown Hotel in Louisville, Kentucky around 1926. They are the ultimate decadent sandwich made from sliced turkey and served open faced along with pimentos, and bacon, all smothered in a mornay sauce, sprinkled with cheese before broiling, something like the Top Chef's did today on the pre-Derby show. That's suspiciously like work on a Saturday, plus I'm not that fond of the soggy bread on the bottom. Panini sandwiches sounded better.
This particular sandwich is from Southern Living, found on "My Recipes" http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=1687558 They have the flavor of a legit hot brown sandwich, but in a package that's much easier to eat. I made ours from left over chicken piccata I had cooked a while ago and stored in the freezer. We had our Hot Browns with steak fries courtesy of the frozen section of our favourite grocery store and served the cheese sauce on the side for dipping. They were quite good! Quite honestly, even fries dipped into the cheese sauce resurrected the homesick bug in me...tasted alot like poutine, only better for you, I think.
So, now that the food's taken care of - how about the race! Can you believe Mine That Bird, FLYING in to win. What a ride Calvin Borel had! Sure woulda' been nice to have a $50 bet to win -see I'm not greedy. Woulda' shoulda' coulda'. DIDN'T.
