Wow - the last day of the month. Can you believe it? Living up north, the end of April meant that camping season was only 3 weeks away. The garden could go in the first full moon after the May long weekend, which is the week before U.S. Memorial Day for those of you that want to know. Confused? Me too! I do recall having to replant on occasion, after following this unwritten rule. Kind of like the farmer's almanac I guess. Accuracy...not so much.
When GMan and I were first married, we were talking about childhood memories and he mentioned these great stuffed peppers his Mom used to make. Well, having made a version of stuffed peppers before, it's not something I would have recommended because my version were made with rice and hamburger in green peppers. They were dry, tasteless and for all that, like the energizer bunny in the burp department. But hey, I was newly married so I HAD to keep my guy happy.
I shot a quick email off to my Mother In Law and this was her response. Download Super Stuffed Peppers Of course in the interest of celebrating the art of cooking, we had to change out the peppers. Red - yellow - orange - green, you decide what your favorite color is. Our favorite are the orange ones. We also added our signature spices to the recipe. Just hope we never develop allergies to garlic or hot sauce or we're in major trouble.
While most recipes call for rice, these make use of quick cooking oatmeal as an extender. Make sure to follow the directions to pre-cook the meat since this is the trick to making the finished product moist and flavorful. I think you could easily substitute ground chicken or turkey for the beef and be as happy with the results, although I've never done it. By the way, leftovers are spectacular, freeze well and reheat beautifully in the microwave.
Oh, and one more thing to note - this version doesn't visit you later by causing unattractive sounds in your sleep.
