While Friday's normally scheduled as date night, I just didn't feel like going anywhere. I know most people would rather make reservations than make dinner, but this "people" isn't one of those people. I mean, why go out when you can eat better at home?
There's a saying in this man's country - "when the mountains are pink, its time to drink". So Friday nights that's what we do - we sit and chat about the end of another week, enjoy a libation or two and watch the mountains turn pink. Sometimes we go out, or just have munchies for dinner, but on this particular week I'm glad I warmed up the slow cooker at noon. We love Thai food in this house - spicy, limey, cilantroey (is that a word?), minty - all the greatest of flavors. Thai chicken thighs is all that and more.
This recipe is from www.dinnerwithjulie.com. It's easy, you can put it on and forget about it, until the aroma convinces you those darn mountains are pink enough, that is! We had it on naked coleslaw, but honestly if you're not worried about calories, for heaven's sake serve it on rice. In fact, when you're cooking the rice, replace half the liquid with coconut milk and you'll really have something to write home about. I couldn't think of anything bad to say about our supper except that I should have made more because oh man, would it be a great leftover lunch. Wrap a hunk a' chick in a mu shu pancake with some green onion and a little sirachi and ohhhh doggy!

Yup we do eat well, that's for true. Just ask the scale!
