Another magic Saturday...magic in that it went "poof" and was gone. We had a pretty lazy day today which was much needed as our schedule's been a might nuts lately. I'm glad we had the Corn Chowder tonight - its so easy - one of those quick, one pot wonders that honestly tastes like you've fussed. We'll pretend I did, OK?
The recipe is adapted from Sable & Rosenfeld, Elegant Entertaining. I've used it for years, though it has evolved a little since we moved to the land of Anaheim chile's, and this Canuck's acquired a taste for well spiced food. I held myself back and added just a little extra heat, honest! I also used hickory smoked bacon that I picked up on sale at Sprouts. Who'da thunk bacon could have so many different flavors - I mean there's hickory smoked, pepper, apple smoked, maple cured, peameal, english style - the list goes on. Just use your favorite, but remember, you really want to taste the corn, so be careful to use bacon that has a milder flavor. Pancetta just wouldn't cut it in this case. Download Corn Chowder
Confession time - every once in a while I buy a hunk of Velveeta. It can be a really useful little gem to have in the kitchen, not just for nachos or good old grilled cheese sandwiches, but also for quick pimento cheese, or pub cheese with jalapeno peppers. Since I needed it for Mac & Cheese later in the week, I thought I'd buy a BIG one.It was a wonderful garnish on the chowder. Along with some sharp cheddar and a little parsley, it made this soup slide down plumb easy. What it's doing to the hips ain't so pretty.
